Cooking Enrichment Activity

Friday evening saw a brave group face the cold to learn how to make an authentic Indian Curry with Saro. Saro was quite the expert demonstrating her skills, having already shown 3 relief society groups when she was last in the USA how to make indian curry.
We also learnt how to eat indian style - with our hands!! Some of us were better than others!!

Saro's Chicken Curry

1 whole chicken
2 large onions
1 clove garlic
grated fresh ginger or ginger powder
3 cinnamon sticks
2 star anise
coconut milk
3 cups water
3 tablespoons oil
3 tomatoes
3 potatoes 3 tablespoons curry powder (purchase from asian shop in Sandy Bay)
1 tablespoon salt

1. Cut chicken into pieces
2. Heat oil and fry onion, garlic and the spices until brown or golden
3. Add chicken and fry till chicken is lightly browned
4. Add the curry powder, onions, tomatoes and potatoes
5. Then add the water, and bring to the boil, stirring constantly. Just before boiling lower heat to simmer until chicken is tender and potatoes cooked.
6. Dish up and serve hot, with rice.
